If you want to travel to Sidoarjo, don’t you just stop by Lumpur Lapindo, Jayandaru Monument, or MPU Tantular Museum, but also try Sidoarjo’s culinary specialty, Lontong Kupang. You won’t find food as special as this other than in Sidoarjo. You may be able to find Lontong Kupang in other cities in East Java, but nothing can match the distinctive taste of Lontong Kupang in Sidoarjo.

The name “kupang” does not come from the name of the city “Kupang” in East Nusa Tenggara, but “kupang” is the name of a sea animal of the same type as shellfish. Its size is as big as rice or soybeans. This animal is easily found on the edge of the beach or in salty mud.

Lontong Kupang is made from boiled kupang, then served with kupang broth, plus kupang petis, chili, garlic, and lime juice. The combination of broth and petis makes the taste of Lontong Kupang fresher and more special. You can add fish crackers or lentho as a side dish.

"How you cook kupang is like how you cook shellfish. We boiled it first. Kupang and shellfish are the same, the same place and the same type, but the difference between both of them is that shellfish are round and large, while kupang are long. The way to cook them is the same as with shellfish: we boil it, then the shell will open, then we ‘gembang’ as the Javanese say, later on kupang will float, the inside of kupang will come out, then we filter it, repeat the process. It is exactly like how you wash rice.

If you asked me about petis, yes, we make it from all the ingredients that are involved in kupang, like water and all kinds of sugar. Different from other petis, for kupang there is a special recipe that makes Lontong Kupang taste special, and there is our own initiative to make it special. You see if other petis are mixed with flour and all sorts. Well, we don’t, we prioritize the taste of kupang itself, so there are no other additional ingredients,” said one of the kupang traders that the author interviewed. It is said that petis is the thing in the Lontong Kupang dish that makes his dish special, he prioritizes the taste of his Lontong Kupang.

Usually, Lontong Kupang traders, besides selling Lontong Kupang, also provide es kelapa muda as an antidote if there is an allergy after eating Lontong Kupang.
